Garlic
Description: The strong flavour of garlic is a vital ingredient in many European, Mediterranean and Eastern dishes. A number of health benefits are also associated with garlic too, including reduction of cholesterol and as a source of anti-oxidents. The oil can also be used in the treatment of bronchial infections. There is no evidence to support the anit-vampire properties of garlic but there is plenty to support good health to those with lots of garlic in their diet.
In Season: Fresh in July-August but can be dried and stored for use later in the year.
Preparation. Although it can be eaten raw garlic is most commonly used as an ingredient in pasta dishes, curries and several other dishes. Break a clove away from the bulb, with a sharp knife cut off the top and bottom of the clove and the skin will peel away easily. The clove can then be chopped with a knife, grated or crushed in a garlic press.
Recipe: Garlic Bread Cut a Cobs Bakery ciabatta in half and toast lightly. Meanwhile crush 4 cloves of garlic (or more depending on how garlicy you like it) and mix with 100g softened butter. Spread the mixture onto the ciabatta and then put under the grill for 2-3 minutes. A perfect accompaniment for pasta dishes
