Sweet Potato
Description: Known by several other names around the world (kumara, batata and yam, although slightly different from the true yam) the sweet potato originates from North America and has only recently become popular in the UK. Contrary to the name it is no relative of the potato, instead it belongs to the bindweed family.
In season: not grown in UK
Preparation: Wrap in foil and bake in the oven for an hour. Alternativly, peel and cut into cubes and boil in salted water until soft.
Recipe Creamed sweet potato with lemon Peel and chop sweet potatoes and boil in salted water until soft enough to mash. Drain and place in a bowl. Mash with a potato masher or fork until a chunky consistency has been acheived. Add 2 spoonfuls of sour cream, the juice from half a lemon and some cracked black pepper. Continue mashing into a creamy consistency. An excellant acompanyment to poultry.
