Purple Sprouting
Description: A very popular member of the Brocolli family that provides a welcome treat in the early months of the year when little else is in season. Unlike calabrese, sprouting brocolli grows in thin spears which are best eaten whole, leaves and all.
In season: January-May
Preparation: With such a delicious, delicate flavour it would be a shame to do anything other than steam and serve unadulterated. If you have a steamer - great, otherwise stand the spears in about 2 inches of water in a saucepan with the lid on and boil the water for up to 15 minutes
